Vegan Banana Oatmeal Pancakes

Ingredients: Makes about 12 pancakes
- 2 cups rolled oats
- 1 cup almond milk
- 2 ripe bananas
- 2 teaspoons vanilla
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- coconut oil or whatever nonstick item you have for cooking
- maple syrup, your favorite toppings e.g., fresh fruits, nut butter or jam
Instructions
- Place all the ingredients in a blender, roll oats, almond milk, banana, vanilla, baking powder, salt. Process until completely smooth.
- Apply oil/spray/butter in a large skillet or griddle over medium heat. Add batter and cook until edges are golden brown, about 2-3 minutes, flip the pancake and cook for another 2-3 minutes. Repeat until batter is all gone.
- Serve topped with maple syrup and fruits or whatever you'd like
